Home made, on a nice weekend brunch.

Cleared out a lot of vegetables from the fridge, focusing on the green aspect. Ingredients:

  • Garlic, Onion
  • Peppers: Poblano, Jalapeno, Serrano
  • Tomatillo & Zucchini - pre-roasted
  • Spinach, Kale, Wild Arugula, Parsley
  • Eggs (of course!)
  • Halloumi (topping)

For spices, only salt, pepper, smoked paprika, cumin. Added 1 cup of water and 1/3 cup of 2% milk for some moisture, since I only had 3 small tomatillo, and the greens needed to steam a bit before wilting.

We think that either the arugula or the kale added a bit of a flavor that we struggled to identify, but wasn't the most pleasant - so I'll have to think twice before including them again together.

Needs anything else? Toasted some whole wheat pita bread
