Made this on a cold day outside with whatever we had around the house.
Used fresh tomatoes and let them simmer longer to break down and cook out some of the water.
Added a single Fresno Chili Pepper to add some spicy zing.
Since we were out of cumin, I used coriander instead, and that worked nice.
Needs anything else? Served with homemade whole wheat bread I had made yesterday, and some crispy vegan sausage slices for that extra protein.
Is it considered shakshuka? 👍
