Made this at home, with vegetables we'd picked up from farm stands upstate New York and New Jersey, and wanted to finish other items in the kitchen.
I was out of onions, substituted with dry onion flakes. Garlic, red bell peppers, some spicy jalapeรฑo peppers, carrot slices, and amazing tomatoes.
Used my Field Company cast iron skillet, topped with the last of low-fat shredded Mexican-blend cheese.
Needs anything else? Paired perfectly with some dense Nordic bread from Bread Alone, toasted for a nice crunch.
