A simpler approach for the weekend.
- Single yellow onion, thin sliced
- A LOT of garlic
- 2 Macedonia Peppers (slightly spicy, but not really)
- Fresh diced tomatoes from the neighborhood farmer's market.
Slow-simmer these with salt, pepper, ground cumin, paprika, and cayenne pepper.
Parcel out to individual pans, drop in eggs. Season with salt, pepper, and cover with some shredded cheese. Finally, add some scallion / chives, and toss into oven until eggs are set.
While waiting, I seared off some halumi cheese pieces in the same skillet to add to the top. Delicious!
Needs anything else? Used residual oven heat to toast some fresh whole wheat sourdough bread.
