Weekend at home! Made a larger batch of sauce, including carrots, red pepper, onion, a whole head of garlic, tomato concentrate, diced tomatoes.
Olive oil, salt, pepper, cumin, smoked paprika, red cayenne, and about half a tablespoon of Calabrian Chilli.
Let it slow simmer for almost 2 hours before adding in some cilantro.
Eggs on top, more cilantro, shaved scallion, and under the broiler for a few minutes.
Let sit for a few minutes, finish with more fresh cilantro and tehina.
Needs anything else? Served with a side of grilled Halloumi cheese and toasted 7-grain bread.
